In The Mood to Bake!

Went to HL's place again yesterday for yet another masak-masak session.

HL wanted to baked some 'bunnies cookies' while I wanted to try to make some cupcakes. HL agreed with the cupcakes plan as she, also been wanting to make some.

We started with cupcakes first. We were worried that it won't turn out to be good but surprisingly.... it's actually quite ok, considering it was our first attempt with cupcakes. The only downside... some of the cupcakes were undercooked.  Guess the heat of the oven is a bit uneven.

I shall keep this recipe and try again next time as I really love the cupcake texture.. very nice and smooth... and tastes really good. It's good thing that we reduced the sugar as we expect the frosting to be very sweet. Actually we're not really keen on eating the frosting but just for the sake of decorating the cupcakes :p

Once done with cupcakes.. and after we had one for our supposed 'lunch'.. we continued with the bunnies. HL prepared all the ingredients and my bro, Chloe and I helped out with the deco.. which took us quite some effort cuz' the choco rice are so small.. and our fingers are so big! :p

And today, we finally went for our CNY shopping :p Also bought some ingredients for another baking session. Can't seem to find any walnuts @_@ So, I bought almonds instead.

Crunchy... full of oats.. and almonds! - Is there such a thing as 'healthy' cookies? :p

I've decided to give this a try - Oatmeal cookies. Again.. I reduced the sugar and my.. the whole mixture is so full of oats! and raisins and nuts! :p Quite an easy recipe and it took me about 1 hour to bake 4 trays of cookies. It's good thing my oven is quite big and I got 2 trays :p

I guess enough of baking for now.. :p  And now.. I'm off to watch Junior Masterchef Australia ;)  (I think we really got inspired by the kids to cook/bake! :p)

I put the cuppie in the fridge. The next day, the frosting became hardened and the cake was all moist with no sign of being undercooked at all. Sedap lah!

Your healthy cookies sure look good. I have a big bag of almonds at home. I have raisins and oats too... hmm... shall I? ;)

oh? I still got 2 cuppies here la. Wonder still ok or not as didn't put in fridge :p

Hehe.. up to you la.. since got all the ingredients. Or I let you try how it tastes like first la before you bake.
